Put one portion of pork mixture on a cabbage leaf and roll it. Close the roll with a toothpick. Make 8 cabbage rolls. Place cabbage rolls in a large pan. Pour chicken soup stock and soy sauce in pan. Simmer the cabbage rolls on low heat until meat is cooked.
Serve udon with grilled chiken or smoked pork tenderloin, topped with chopped green onions. For authencity, you'll want to make a dashi, a soup made of kelp, bonito fakes and water. The frst making, the ichiban, has the most flavour. Way easy and way good!
