Just follow this recipe to get wonderful Dosa Recipe

Ingredients:

* 1 cup plain Rice
* 1 cup parboiled Rice
* 1/4 cup white Urad Dal
* 1/2 teaspoon Methi (Fenugreek) seeds
* 1 /2 teaspoon Soda bi carbonate
* 1/2 cup Curds
* 10 - 12 teaspoons Ghee or Oil as preferred
* Water for grinding

Method:

* Wash the Rices and Dal together.

* Add plenty of Water and Methi seeds.

* Allow to soak for 7 - 8 hours or overnight.

* Rewash the Rice by draining the Water 2 - 3 times.

* Grind to a paste. Rawa -like grains should be felt in the batter.

* Add Soda bicarb and Salt and mix well.

* Keep aside in a warm place for 8 - 10 hours.

* Beat the Curds well.

* Add to the batter, add more Water if required.

* The consistency of the batter should be thick enough to thickly coat on a spoon when dipped.

* Heat the iron griddle or non-stick tawa well.

* Pour a spoonful of batter in the centre, spread with the back of the spoon to a thin round.

* Pour a teaspoon of Ghee or Oil over it.

* Remove with spatula when crisp.

* Serve hot with Chutney and / or Sambar.

It depends on what kind of dosa.If you want thin,crispy dosa, then the batter should be very fine.If you want uthappam,batter should be little coarse.
>Ingredient for best dosa:
>Rice:-1 Kg
>Black gram dal (husk removed -called white urad dal):-200 gms
>Fenugreek seeds:-2 Tbsp(30gms)
>Soak the rice for atleast 4 hrs-(upto 6hrs-optional).
>Soak the urad dal and fenugreek together for only 1 hr.
>Grind the soaked ingredients seperately till it become very smooth and a pouring consistency.
>Rice for atleast 25 to 35mts in wet grinder(depends on efficient of the grinder).
>Then grind the urad dal and fenugreek to a very fine paste.
>Add some salt and mix it together very briskly in a bowl leaving half of the bowl to be empty and it should blend together.Leave it to ferment for atleast 10 to 12 hrs.(If it is hot climate,it will ferment in 7-8hrs.otherwise it will take 11-12hrs.Now you can see the batter have raised in the vessel.Mix it once again.
>With a flat bottomed ladle spread the batter on hot tawa,with a medium heat.If you spread it very thin,no need to cook upside down.If it is thick then turn it and cook.



Here is best & simple dosa recipe
3 cups white long grain rice (Note: if you have sona masoori then please use sona masoori rice)
1 cup parboiled rice
1 cup Urad Dal (Black Gram lentils)
1/4 tsp fenugreek seeds

soak all of the above ingredients in water for about 8 -12 hrs.
grind in a blender using enough water ( you can use appox 2-4 cups of water)
add 1.5 tsp salt to the batter
leave the batter to ferment in oven or microwave for about 8-12 hrs



With urad dal and rice the ratio is 1:2.

2 cup: Rice - preferably parboiled
1/2 cup: Split and husked Black Gram (Dhuli Urad) - soaked with rice for 5-6 hours
1/2 tsp: Fenugreek Seeds
Oil to smear the pan for cooking the dosas
2 tsp: Salt
