Question: Is tea smoked chicken called something else?
my local restaurant does a dish called 'tea smoked chicken' which is small pieces of chicken in a dry and smokey batter served with chillis and spring onions, however i can not seem to find it at any other restaurant. Is it called something else?

The dish may also be called Lapsang souchong Chicken because that is the type of tea that most chefs smoke food with. Lapsang souchong has a delicious smokey overtones when you drink it because the tea is actually smoked when it is dried. This makes it ideal to use when smoking foods, such a poultry and seafood such as salmon, sea trout even tuna.

I've never heard of this, but it sounds great so I looked it up. Seems like it comes up as chinese tea smoked chicken.
