Question: Do you know of any child friendly recipes for project on Italy ? I'd like something easy to make that won't?
cost an arm and a leg.My grandson will be making it here and then taking it to school.They are having an international day and each child gives a presentation on a chosen country and they can bring in samples to share with the school.Whatever you suggest must be peanut free. I don't know how the food will be kept hot if needed.We were thinking meatballs but will they taste okay at room temperature ? Any ideas will be appreciated.The teacher suggested they have the food portioned before hand.

Instead of making a main course, why not consider a very inexpensive bread side.
Bruschetta is kid friendly and will definitely yell out "Authentic Italian".
Since your grandson needs to bring portions, what better idea than this. You may add any ingredient you seem inexpensive, but the traditional is tasty and goes with everything. It is very nutritional as well. You can take them in a large tray ready to present. Make it pretty by garnishing with fresh parsley. Depending on how many portions he will need, adjust this accordingly.
Here's a very simple recipe for your consideration:
Toasts:
* 1 (1-pound) loaf ciabatta bread, trimmed and cut into 14 (1/2-inch thick) slices
* Extra-virgin olive oil, for drizzling
* 1 garlic clove, halved (for rub only)
Topping:
* 3 tablespoons extra-virgin olive oil
* 3 cloves garlic, minced
* 12 ounces (12 cups) baby spinach
* Kosher salt
* 2 cups (4 ounces) shredded fontina cheese (mozzarella/provolone is good too)
Directions
For the toasts: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Arrange the bread slices in a single layer on the baking sheet and drizzle with olive oil. Bake until light golden, about 10 minutes. Cool for 2 minutes. Rub the warm toasts with the cut side of the garlic. Set aside.
For the topping: In a large skillet, heat the oil over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is fragrant, about 30 seconds. Add 1/2 of the spinach and stir until it begins to wilt, about 2 to 3 minutes. Add the remaining spinach and cook until wilted, about 2 minutes. Season with salt, to taste. Using tongs, arrange the spinach on top of the toasts. Sprinkle with cheese and bake for 5 to 8 minutes until the cheese is melted and bubbling. Season with salt and cool for 2 minutes. Transfer the bruschetta to a platter.

make english muffin pizzas..its easy and kids love them..just put them in a pan with foil..they should stay warm..



meatballs or pizza...no one throws away pizza, and they let it set out for a very long time. have fun.
