What is a quick and easy argentinian recipe?!

Have you had Chimichurri? It's one of my favorites sauces in the world.

CHIMICHURRI
(Argentine Spiced Parsley Sauce)

? cup olive oil
? cup red wine vinegar
? cup finely chopped onions
1 teaspoon finely chopped garlic
? cup finely chopped fresh parsley
1 teaspoon dried oregano
? teaspoon Cayenne pepper
1? teaspoons salt
1 teaspoon freshly ground black pepper

Combine oil and vinegar, and beat them together with a whisk or fork. Stir in the onions, garlic, parsley, oregano, Cayenne, salt and black pepper, and taste for seasoning. To develop its flavor, let stand at room temperature for half an hour before serving. Makes 1? cups.

Goes well with grilled and roasted meats if you eat meat. :)


MANZANA VERDE
(Beet & Green Apple Salad)

3 or 4 beets (or 2 cans of beets)
1 Granny Smith apple
Olive Oil
Lemon Juice
Salt

Peel and boil beets until soft when pierced with a fork. Cut into bite-sized pieces. (Or open a can, hah!)Core apple and cut into bite sized pieces. Stir beets and apples together. Drizzle with oil, just enough to coat. Squeeze lemon over all, and add salt to taste. Stir to combine. Can be served cold or at room temperature.
