technically, chimichangas aren't really mexican... they are tex-mex in origin (although they do serve them in a few places in mexico)

you just put the meat and filling of your choice... if you want heat you can add hot sauce, chopped chilies or some spicy salsa and wrap it in a tortilla
then you need to deep fry it, and you now have a chimichanga.

not to convenient or easy to do at home.

as for sauce, that's your choice too... none is needed, but you can use sour cream, guacamole, salsa, or anything else.

Hola! I have a great and easy recipe for you. Bisteak a la Mexicana: Get your favorite steak (TBone, Rib eye or sirloin) Brown it on high on both sides and remove from heat. In same pan where steaks were done you will saute chopped onion, tomato, cilantro, fresh garlic & 1 fresh jalape?o. Add alittle water to scrape off the bottom of pan. Cook until onion is translucent. Half way through cooking the veggies place steak in oven and broil on high for 2 1/2 min on each side. When steaks are done broiling add back to pan together with cooked veggies. cover on med low for about 3 min. Plate steak and pour everything in pan on top of steak add you have shredded cheese on top. Sides: pinto beans and mexican rice. AND A MARGARITA! yum :0P Good Luck!

I have a good one for you out of a cookbook of mine. I don't have it with me right now but I can send it to you later if you want. It's not very spicy but it is tasty and you could eat it with hot salsa or hot sauce if you want.

If you want some recipes used by popular Mexican restaurants that you can make yourself at home, you should check out the cookbook. You won't believe what all you'll find.

i'm a fan of chili con queso or queso verde for a topper on these goodies
