AtLarge is correct, and in some circles mayonnaise is considered a "Mother" sauce as you use it to make tarter sauce, 1000 island and Russian dressing, aioli, sauce rose` and other cold sauces, it is not as well known or mention is the same breath as the others, but when I was a chef's apprentice here in Canada back in the 1970's, we were required to make it from scratch during our in school training, and it had to be done right the first time, plus we were also shown how to repair a broken one to.
