German sausage/Chorizo fridge shelf life?!


Question: German sausage/Chorizo fridge shelf life?
Hi.In August we bought a job lot of different cured sausages from a stall in rochdale. It was a german market that travels about so some of you may be aware of it. The sausages have been in the fridge since i got them and now salt appears to be coming out. Are these just fit for the bin now or can i cook with them still. Many thanks in advance

Dried sausage, sometimes called salami, will keep for many months, but not in the fridge. It should be kept in a cool, dark place. Admittedly, this is difficult in modern centrally heated houses.
Chorizo sausage is not German; it could be Spanish, Portuguese or Mexican.
I took some to India and we put it in a cupboard, It started to ooze fat because it was too warm.
You could probably still use it, but I wouldn't recommend it.
Dried sausage doesn't need cooking, but I sometimes dice it and add it to a tomato sauce, just to heat it through and serve with pasta.



After this length of time I would bin them. Anything bought fresh should be eaten as soon as possible. I know that cured meat can last much longer but as it doesn't have a use by date on it then its best not to chance it.
Just today I bought a Chorizo 'U' shaped sausage for use in stir fry's and the use by date on the package is 15th March so that's only 2 months away which makes me think your sausage is past its best and not to be trusted.
