Question: What to do with 20kg of lychee?
i only have a bar fridge and have already given heaps away to the neighbours.

how can i preserve them?

i only have a tiny bar fridge with no freezer!

I sure wish that someone would give me 29 kgs of lychee. We would make the usual jams etc but also, would make a super ice cream. Lychee ice cream is truly fabulous.. There is a company in California that does sell it commercially.

I think you could make some jams and salsas with lychee and preserve it in jars. Mason jars from the supermaket have instructions right on the box how to preserve, it's pretty easy and fun with a bottle of wine and a friend.
