What would be a good side dish with a thai coconut-shrimp soup?!
Answers:
I like crunchy sides with soup, regardless of their places of origin.
My initial thought was of Thai shrimp chips (kroepoek). If you've never had them, they are light and crispy, nice with soup. If you don't want to make them, many Chinese restaurants sell them.
Shrimp toast would be great as well, much more substantial than the chips you are looking for something more hearty.
An excellent side would be Vietnamese chao tom (grilled shrimp on sugarcane). Shrimp is ground with herbs and spices, formed on sugarcane, then grilled. It's traditionally served over fresh aromatic greens with julienned vegetables.

This is a meal in itself, and goes great with jasmine rice. If I had to choose an accompanying dish I'd choose a mild, basic one to counter the spicy exotic soup, like GAI YANG.

Curry rice, made with curry powder, diced onions, and a little vegetable oil. It's very good. :)
I could also see bread with it to dip into the curry, and a vegetable like broccoli or sugar snap peas.
im not expert in making food but i am in eating it.
i would say something possibly dry maybe. like some white rice with very few vegetables mixed in it to give it some flavor. And MAYBE some patatoes wouldnt hurt.
I would go with the rice and veggies or if you don't really want a side, I bet a nice slice of bread would go good.
