Egg is a common sushi ingredient (called tamago). It is beaten and cooked in a very thin layer like an omelet, then cut into thin strips. It might be tricky to identify as egg, as the texture is different than the Western way of cooking eggs.
It could also be a marinated tofu or even umeboshi --pickled plum, which is sometimes pinkish, but sometimes yellowish-orange, depending on the type of umeboshi.

I would say it is probably sweet egg (tamago). It give sushi a great sweet flavour and goes well with most other ingredients.

It's called tamagoyaki and we put it in sushi because it's sweet and adds flavour to the sushi.
Personally, I love it.
