Draining Ricotta Cheeses?!


Question: Draining Ricotta Cheeses?
I need to drain ricotta cheese for a cheesecake, but it says to do so overnight and I don't have the time, is there another quicker way to do so other than putting it in a colander.

What a joke ... my own lasagna recipe says to drain the ricotta for an hour ... I did last night, and nothing happened!

If your ricotta is quite dry, draining it won't make any difference. If it isn't the light and fluffy dry kind and seems very moist, you're best off draining it.



If you have cheesecloth, put the ricotta in the cheesecloth and twist into a ball. The more you twist the more fluid will come out but it's not the same as letting it sit overnight. Make sure you use double or triple layers of cheesecloth. A muslim fabric will work just as well as cheesecloth.



You can put the ricotta in a cheese cloth, put the cloth in a sifter and press with your hands on the cloth as hard as you can, until all the liquid comes out.



Wrap it in cheese cloth and put in or cover it with uncooked rice. The rice will suck the moisture out of it. You'll still need to leave it for a couple of hours.
