If you pick it when very young, you can cook and eat it like sweet corn.
I ate plenty of it as a kid before all the sweet corn varieties were developed by genetics. We called it field corn, along with other varieties. When young, it does not have any of the vivid colors yet and is yellow, just like sweet corn.
After it drys, it makes great feed for chickens but I have not seen any recipes that use mature corn of any kind besides grinding it for corn flour.

I think Indian corn is for decorative purposes only. However, blue corn is used in southwestern cooking.
