You can pickle them, for 6 bell peppers use 3 whole garlic cloves, cover them with vinegar and water (1 to 3), and salt as desired, and leave it for 5 to 7 days when color changes, and you can cut them for less time.

You could roast them & serve them as a salad.

Add finely chopped bell peppers to tuna or chicken salad.

Steam cored peppers for five minutes, stuff them with cooked rice salad and your turkey sausage and bake in a 350?F oven until they are soft.

Sauté chopped peppers, celery and onions, then combine with turkey sausge, chicken or seafood. Serve on a bed of rice or couscous.

Purée roasted and peeled peppers with sautéed onions and zucchini to make a deliciously refreshing soup that can be served hot or cold.

a sauce! black them to peel.discard seeds .cook in a little olive oil half onion sliced,,2 cloves of garlic until transparent and garlic is tender not black!transfer with bells peppers to blender, add salt,a little chicken broth and puree.transfer again to small skillet and reheat in low flame when ready to pour over meat.to spice it up add a dash of vodka when you heat.
use this sauce over fish, chicken breast or cubes of beef.any of this already cooked and seasoned to taste.

I think the stuffed bell pepper idea sounds great! Stuffed peppers are really good with sausage and rice. I found a decent recipe here (they use pork sausage but I think that turkey would be fine to substitute).

Use them for a food fight, they are extremely easy to clean up, & they are a ton of fun, plus if there is a family member you don't like they can do quite a bit of damage when aimed at the face.
