How do I stop rice from sticking to a sushi mold?!


Question: How do I stop rice from sticking to a sushi mold?
I have a sushi mold that consists of a top and bottom piece. I understand that for the deeper bottom piece your suppose to put in rice, then ingredients, and then more rice on top of it. At that point your suppose to take the top of the mold, press down, remove, and then turn the bottom portion of the mold over and dump out the rectangular piece of sushi. The only problem is, when I remove the top piece, the top half of the rice is removed, exposing the ingredients in the middle.

Since this problem makes the sushi mold virtually useless I was wondering if anyone knew of any ways to stop the rice from ending up stuck in the small rectangular depression of the top piece of the mold?

I run it under water between each pressing. It prevents sticking and doesn't compromise the flavor of the rice.



Yanchagu is right. It's amazing how effective cooling the mold every time before putting rice is to remove the rice from the mold.
I've once heard that the hands of a sushi chef have to be relatively cold to avoid the rice sticking to the hands.
Also I always serve cooked rice with a scoop only after running water over.



Yanchagu is right, as part of preparing a bowl filled with cold water is a good idea to keep on the side. This way you can rinse the sushi mold each time with less water.



You can wet it with water. If you want flavor, you can use a water salt mixture or use rice seasoning vinegar. Good luck



Use some type of cooking spray or spray it with some evoo.
