If you like horse meat of all kinds, this is for sure the place for you. Horse steaks and horse sausages are probably the most common food. Also they consume large amounts of lamb and mutton. Since this is still basically a nomadic area, many of the dishes are preserved for use over long periods of time. Shalik (kabobs) are very popular. As in many countries in Central Asia, if you are invited to dinner, it is wise to partake of the foods offered in order not to offend your host.

Apples for one thing; they originated in Kazakhstan. Mostly just your usual middle-eastern fare. Lots of mutton/lamb.
