Coq au Vin is actually quite simple, as is Beef Burgundy. They simply take a little prep time and a bit of cooking time. Totally worth it.
Homemade pesto (only requires 5 ingredients) stirred in with spaghettini and kalamata olives, Greek Salad on the side.
Greek Chicken and Potatoes with Greek Salad
Grilled Shrimp basted in garlic butter or garlic olive oil, Wild Rice Pilaf with fresh thyme, pecans and lemon, Fresh Italian Green Bean Salad
Grilled steak, twice baked potatoes and roasted broccoli or asparagus.
Braised stuffed pork chops with rice (cooked in the braising liquid), and fresh veg in season.
Machaca or Carnita tacos with saffron rice or guacamole on the side.
Egg drop soup, Egg Fu Yung, Pork or Shrimp Fried Rice.
Beer Can Chicken, Potato Salad, Baked Beans, grilled zucchini
Italian Sausage with peppers and onion served with some pasta on the side to place the dish on.
Grilled Halibut, Basmati Rice, Candied Brussel Sprouts
Warm Artichoke and Jalapeno Dip with water wafers, Grilled Bacon Wrapped Sea Scallops, Pear and Gorgonzola Salad.
Clam and Shrimp Chowder with a good crusty brown bread and great butter for it.
Pozole and Tamales, Calabasitas.
Slice or cube a sirloin steak and brown with seasoned flour. Make a brown gravy with onion and thyme. Cook the meat in the gravy until fork tender (probably 2 hours), serve over rice or egg noodles with a side of pea pods in parsley butter. So-o good.
Dessert is always nice when it's light. Mascerated cherries, berries or peaches. Mascerate them in a bit of honey, perhaps some flavored brandy, a bit of cardamon, and top with homemade whipped cream flavored with almond or raspberry extract. Yummo.
If you try one of these, you will have a happy girlfriend on your hands. You'll like that!

Steak, baked potato and salad is always nice. And it's easy. Get a couple of rib eye steaks, make a compound butter, I make a chili lime one when I make rib eyes. You get a stick of butter, let it get soft, to room temp, add lime zest, a tablespoon of lime juice, a little salt, and about a tablespoon or 2 of chili powder, mix it all together, and roll it up in some Saran wrap, or just leave it in the bowl, then when your steaks are cooked put a slice or spoonful onto the steak....soooo good! Baked potato all you do is get a couple baking potatoes, wash them well, turn your oven to 425, and stick em in for about an hour, or until you can poke a fork into them and they are soft. Then you just add butter, sour cream or whatever you want. The steaks you just heat a frying pan to high, add a little oil, get the pan nice and hot and put them on. Sprinkle with salt and pepper, let them cook about 4 minutes each side, or until they are cooked to your liking! And the salad, any kind you like is fine, blue cheese or a vinegar and oil salad goes good with steak.

A very easy green thai chicken curry.
Or fish.

Green curry sauce ( buy from a store, or make it easy), add chicken and some fresh boiled rice, a few green veg, like beans, and snap peas. SHe will give you a good time that night, lemme tell you.
ALso make some thai tea- you can buy a mix and add milk- its the way they make it in Thailand so don't think you're cheating.

I've lived in Thailand.

Make nasi goreng. It's singaporean, easy to make and it tastes both exotic and very good!
