Depending on which part of China you are looking at but basic traditional food will be rice / noodle / food made of flour.

Not all Chinese eat everything and anything, China is simply too big and populated to stereotype everyone.

Rice at every meal
noodles
soup
all parts of animals- entrails, brains, heart, intestines, feet.
Lots of vegetables, stir fried with garlic chili, ginger, onion,
Meat of all kind, with ginger garlic, onion, chili, herbs.
They eat a lot of fresh food, I would say that is the main thing-0 all the food is freshly made and prepared, and always put into a wok and stir fried, with fresh spices and herbs. Usually served with rice.
THey make soups, and thrown everythinginto a big bowl, with noodles in the bowl too-
soybean curd is popular, and pork. They do great fish too, crispy fish, chili red bean fish, blackened fish, ginger fish.
It's the biggest country on the face of the planet so asking for tradtiional foods is like asking what ant is the biggest one on earth= there are millions of traditional dishes.

The chinese will eat just about anything, and I do mean anything.

Insects, partially formed birds still in the eggs, animal schlongs, anything.

They do not have a Western Sense of discust for flavour, textrue or source.
