How to Make Turkish Delight The Easy Way

Difficulty: Moderately Easy Instructions.

Things You'll Need:

?4 cups sugar
?4 1/2 cups water
?2 1/2 teaspoons lemon juice
?1 1/4 cups cornstarch
?1 teaspoon cream of tartar
?1 tablespoon rosewater
?1 cup confectioners sugar
?finely chopped nuts (if desired)
?candy thermometer

1.In a medium saucepan, dissolve the sugar and the cornstarch in the water, stirring constantly.

2.Add the cream of tartar and boil until your candy thermometer reaches 220 degrees F. covering the pot for the last 5 minutes.

3.Add the lemon juice, the finely chopped nuts (if desired) and the rosewater to the mixture and mix it well. Remove from heat.

4.Pour mixture into a well greased pan. Once cooled, cut into squares and roll the candy in the confectioners sugar until covered nicely.

Tips & Warnings

?You may wish to add food color to the candy when you add the lemon juice and rosewater..
?Stir constantly to keep the candy from scorching..
?Store in an airtight container with wax paper separating each layer. It may also be helpful to sprinkle the confectioners sugar in between layers.

I get double pistachio turkish delight from the spice bazaar in Istanbul sent to me at Christmas and for birthdays, and it is amazing, best I've tasted.
Fry's Turkish Delight is probably the biggest insult to Turkey I've ever seen, it's really awful.



I LOVE Turkish Delight and have been looking for the very best quality to purchase. A friend brought some for me from Turkey, but I've found the Turkish Delight that I can buy in the U.S. and online isn't nearly as good as the real deal



I like Turkish delight especially the jelly-like one flavored with rosewater.
