Need help with a Cajun Menu!?!


Question: Need help with a Cajun Menu!?
Hosting a cabin trip for 20 people and my good friend has a kick-butt jambalaya recipe. We figured it would be fun to make it a cajun theme menu. We want to keep it simple, and not go over the top with it because we're on a strict budget.

Here's what we're thinking, but would LOVE your feedback.

Jambalaya
Grilled Spicy Sausages
Green Salad
Baked Cornbread
Potato Salad
Hot Chili
Pecan Pie

Well, the only cajun item I see is the Jambalaya, but cajuns love their sausages. Good ones, not stuff like Hillshire Farms, that's like spam in a tube. If you can get good ones, do, if not, try something like Johnsonville Brats or the Italian, great for grilling. We like cornbread, but usually w/beans, so cook some famous in New Orleans 'Red Beans and Rice' to go with it. If you're gonna have the potato salad, that means you Have to cook Gumbo. Doesn't matter what kind, but that's what we eat potato salad with, so there you go. Chili is not cajun, don't get confused, focus, forget it. Green salad is for people that don't eat everything else, and if you're inviting cajuns, you'll probably have some left over. Pecan Pie is a delight any where, but the bread pudding recipe probably would be nice, especially if it's around the holidays. Personally, the pie sounds good enough. Real pecan pie, the Karo Syrup recipe on the bottle.

Jambalaya is really a meal on it's own which would contain sausage, chicken and/or shrimp.

I would simplfy the menu and do a green salad, jambalaya and for dessert I would do a bread pudding with bourbon or rum sauce. However, if you want to keep the pecan pie, that would be good to with a bourbon or rum sauce.



Hmmm, chili doesn't say Cajun to me at all. Now red beans and rice fairly screams it...I have a fabulous recipe I use from Cook's Illustrated, if you're interested, let me know
