apple cider vinegar and cider vinegar are 2 names for the same thing. You have the ingredient the recipe calls for.

Cider vinegar is apple cider vinegar. However, it is not actually a Chinese ingredient. It will be good. Better than white vinegar.
Depends upon what you're making, but white vinegar and a little apple juice. If the apple flavor isn't a big factor, just use white vinegar.
