I've made bread twice this week. 2 loaves each time. They've cost about 4.00 to make so roughly a dollar a loaf for good whole wheat & oatmeal breads. Bread is very easy to make especially if you're a good pastry baker. Rye flour is readily available in most any grocery store and specialty grains and flours are easily found in health food stores. There are numerous sources on line for baking supplies. When looking at web sites please remember to look at shipping charges. There are many online sources for bread recipes. www.kingarthurflour.com has hundreds of recipes. I've never used a bread making machine but I wonder if one would be of use to you as rye dough is heavy and sticky and it seems to me that bread machines are mostly for the lighter American type breads. I could be mistaken. Bread is very easy to make by hand and I find the process of kneading the dough relaxing & therapeutic. I do have a 6 quart mixer I occasionally use and personally I think one of these would be a better choice for you given the type of breads you are interested in making. One other thought. You will come out with a much better product if you buy instant yast which comes in a jsr not those little packages, it's also easier to use as you can add t right into your batter with your flour dry. it doesn't need to be dissolved separately. Hope this helps! Have fun & enjoy!
I'm a Chef and have made thousands of loaves of bread & as many rolls. I've also taught bread making classes several times.
I am from Germany, a country with 400 bread types. I make my bread at home and it not expensive at all. I ' ve bought a baking machine and since 5 years I am making bread. But you have to get some expericence in using it. Very heavy and big rye breads gets better in the oven.
A baking machine makes loaves about one kilo size. The costs depend on the costs of the ingredients (may be wheat-flour is expensiver in your country than in mine) and engery.
The cheapest way is to buy the plain ingredients. Here some recipes in English:

Its not really cheaper if you consider the cost of a good machine and the time involved. If you eat a lot of bread and have the time, go for it. Your finished product will be much better than what you can buy in a store.
I found a second hand bread machine at a thrift store. I have made a lot of rye bread with it since. I like making varieties of bread that aren't available in stores. I think you could make lots of different kinds of breads and even pasta dough.
i have used my bread machine once in like 4-5 years. just glad i didn't buy it.
