Ham (or sausage or bacon) or chicken would be great. Cheese is always goos with tomatoes and pasta, and would work with any of those meats as well. As for vegetables, yes, mushrooms and spinach or broccoli would be good. Or asparagus or courgettes.
A plain tomato sauce is good - fry a little onion and garlic until soft, add chopped tomatoes (from a can) and some concentrated tomato puree and simmer for a few minutes. Add black pepper, basil and oregano before serving.

I personally would roast the tomato with a little basil and a clove of garlic, then heat extra-virgin olive oil or butter with a little salt and pepper and combine them. Toss the pasta in the mixture, and viola! There is a simple, easy, yet delicious pasta dish.
Almost any type of pasta would work, but I would recommend a cheese filled tortelloni, tortellini, fagotelli, ravioli, or even a fettucine or angel hair pasta.
Artichoke hearts and black olives would be great with the roasted tomatoes. Cut the artichoke hearts into bite size pieces. Cut the black olives in half so they don't roll around so much. I'd also toss on some toasted pine nuts when serving. Fresh parsley. Fresh basil if you have it. Of course garlic is a must. A pinch of crushed red pepper for a little kick.
Add the pepper during cooking and sauteed garlic at the beginning of cooking. Add the fresh herbs at the end.
For protein, shrimp would be great with this combination. Chicken would also work.
May I suggest you make Tapenade Sauce to go with the roasted tomatoes. It is a Rachael Ray recipe if you are familiar with her cooking. It is a simple recipe, but it is good.
As for meat, how about some chicken, cut into strips, and sautéed in liquid smoke, garlic (add at the last minute), olive oil, and a little pepper.
