Question: Spagetti with veggies or bean and rice for 30 ppl at shelter?
I need to cook for 30 women at shelter on saturday night. Whats better:
spagetti with veggies (no meat) OR beans and rice ?
how much in pounds (raw spagetti or beans rice) i should make for 30 ?

I'd do spaghetti..You'll need about 8 pounds of spaghetti and 2 gallons of sauce plus your veggies. 3 or 4 eggplant, 3 or 4 pounds of mushrooms and a couple of big onions all diced & sauteed in olive oil will do it for you. Good Luck!

You are feeding people at a shelter. Very possibly this is the only meal they will have that day. You will need more than a " recommended" portion size. What I have given you is a modified recipe from the US Navy. The recipe was cut down from a 100 serving list and changed a bit with some things added and some removed.


10 1# bags of spaghetti
9 large cans of sauce of your choice ( Ragu / Del Monte etc)
2 large can of crushed tomatoes
3 yellow onions diced fine
1/2 garlic bulb finely minced
3 zucchini cubed
3 cans of mushroom stems and pieces or 3# of fresh mushrooms
3 tomatoes diced or 2 cans petite diced tomatoes

Saute the onion and garlic in olive oil. Add everything else and bring to boil then immediately simmer for at least 45 minutes. Prepare the spaghetti and reserve some of the pasta water. The crushed tomatoes thickens the sauce the longer its on the heat. Thin with pasta water.
