Cabbage (thinly sliced, place some bacon in a stock pot and fry until crisp. remove the bacon and place the cabbage into the pot and "fry" for 1-2 mins. then place 1 cup of water and 2 tablespoons of vinegar into the pot....cover, turn every 10mins until tender)

My friend owns a West Indian restaurant. When I get jerk chicken, it comes with fried plantains, rice and beans and fried cabbage. Of course Roti is always a plus
