Question: How to make chinese food properly?
whenever i have chinese food the meat is always tender and juicey, not chewy or dry like when i usually do stir frys, how do i make the meat like they do at the take away stores?

use kangaroo or koala meats!



Marinate the meat for 40-60 minutes before cooking. As there are millions of recipes, the bottom line is to keep the meat in marinade in order to maintain juiciness. If the recipe does not require liquid marinade, say for minced meat you can mix in a few drops of water and/or a little cornstarch, then add a little oil to seal in the moisture. Meat should be stir fried in high heat from the beginning for searing in order to retain internal juices and flavors.



Use high heat ( preferably high pressure stove) and fast cooking method.
The heat and speed will sealed in the moisture in the meat making it tender and juicy.
A very thin coat of battered egg and corn starch will also help.
