Are there any good cookbooks from a well-known cook that features cajun food that isn't really spicy? Thanks.

River Road Recipes is an older cookbook, but a good one. Paul Prudhomme's cookbooks. Any cajun cookbooks from real cajuns. If the food is too spicy, leave out or use less of the pepper. Cajun food is SEASONED well. It isn't just salt and too much pepper. We cajuns use onions, garlic, bell peppers, celery, green onions, parsley, as much or as little as we like. These are called SEASONINGS. The salt, pepper, other dried, powdered herbs like garlic powder, onion powder, etc. are called SPICES. Know the difference and you'll not have to deal with over spiced foods. Cajuns love their hot peppers, especially Tabascos and Cayennes. You don't have to eat them in large amounts for the flavor. Use them according to your own taste and you can use any recipe you like. Real cajuns get up in the morning, put on a pot of coffee and a pot of rice and then think of what they'll cook today.
