Now to answer your question, to make great kimchi buy a large jar of Red Chili Paste not the powder. Take some rubber or plastic gloves and spread the chili paste evenly between all of the napa cabbage leaves and throughout your other vegetables that your working with. Continue until all of the vegetables are coated and packed into your crock or jars. Secure tightly with the lid and store in a cool place allowing the fermentation process to begin.
Enjoy!
I'm a personal chef. I love Kimichi and especially making Kimchi Pancakes! Look online for various recipes if your interested.
If you cannot find chili powder, you can substitute with Kochujang chili paste, if you cannot find kochujang, you can substitute with cayenne chili powder.
