first where is he from, then try asking what he likes from his home country,then research it and try to make it for him.

My friend made this really yummy thing for me, I think she called it sambusas? They seem more like an appetizer, but so good! She made rice really well, too. She added spices I had never had in rice before.
Also, something she called wedding candy? It was orange and she made it in a sauce pan.
The best part of eating her cooking is listening to her and her family talking at the table. It was a great time.
