Question: Thai chinese noodles- why cool down after cooking?
l have noticed that many chefs are cooling down noodles straight after cooking. why????

Answers:

We Asians cool down our noodles because they are too hot. Straight out of boiling water, plus they also add a touch of oil into our noodles so they do not stick together.

Noodles comes in many variety, however we cook them in a boiling water. After the noodles are soften we let it cool down for a second. Sometimes Chef do cool it down in a cool water. This depends on the style of a chef. But most important thing is we do it our way. ANd it's delicious.

Noodles are one of the main dish of Asian cooking. There are many varieties to choose, but Thai restaurants do not cool our noodles down. It depends oon the chefs really.

So they won't stick together and clump. That would make it more difficult to eat as you would have to cut those clumps.
