Can you store hand rolls [japanese] in the fridge over night?!
And eat it for lunch the next day? You can with sushi, but I'm not sure if the texture for the nori would go bad.

Yes, you can but they are better to eat fresh rather than store them. If you store them in the fridge the rice will go very hard and the nori soft and it will not taste nearly as good.
