Answers:

There are a lot of variations of Chinese food and on the whole, I would say that North American Chinese buffet is a far cry from traditional Chinese food from China. The Chinese love rice (like the Japanese) and often dishes are heavy on the green vegetables and not the battered deep fried. You will find a lot of egg-type dishes as this was the main source of protein for a lot of Chinese people and as you get into the more rich foods of China you will see more meats.

When ordering Chinese food from a establishment, make sure that it has roots in Chinese cooking. Family owned Chinese places over the outlets are your best options as they will have a menu with authentic dishes that you usually have to order separately. Generally the buffet is not a great example of the wonder food that the Chinese people have influenced. Be daring, you might find something that you like!

expecting chinese take out food from america to taste like traditional chinese cuisine is like expecting mcdonald's to be the prime example of american cuisine.

I heard from some Chinese friends that they are quite different.

Even the fancy Chinese restaurants in North America are not 100% Chinese.
