My boyfriend is from ghana, I want to make him a easy and tasty dessert for valentines day. Does anyone have any suggestions? Thanks

Ghanaian desserts are almost all based on the local fruit - the banana.

BANANAS GHANA is made with cinnamon, orange juice and flavored with Curacao or Apricot Brandy, all garnished with sweetened sour cream and brown sugar.

ACCRA BANANA PEANUT CAKE has cake dough and a cream made of mashed bananas, peanuts and cinnamon.

KELE WELE is not sweet, but it is served as a dessert: well ripened bananas are mixed with onion, garlic, ginger and olive oil.

A dessert which doesn’t include the local fruit is represented by the FOOLS: Fruit puree folded into custard or whipped cream, which is also famous in Liberia and Nigeria. The STRAWBERRY FOOL contains: strawberries cut in quarters, heavy cream with port or Madeira wine and confectioner’s sugar. (This may be the most appropriate for V-Day as it is red. :)

Here's the cake:

ACCRS BANANA PEANUT CAKE
from Ghana

4 cups all-purpose flour
1/4 cup cake flour
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
10 ounces butter
2 1/2 cups sugar
4 eggs, lightly beaten
8 bananas, mashed
1/2 cup peanuts, coarsely chopped
1 teaspoon cinnamon

In a mixing bowl, sift together the first five ingredients, set aside. Cream together the 10 ounces of butter with 2 cups of sugar in another medium bowl. Lightly beat eggs; blend into creamed mixture, set aside. In a large mixing bowl mash 8 bananas and add coarsely chopped peanuts. Alternately add sifted dry ingredients and creamed mixture to bananas and peanuts. Combine well and pour into greased 9 x 12 inch baking pan. Bake at 350 degrees for 30 minutes or until a toothpick inserted in the middle comes out clean. In a small bowl, combine 1/2 cup sugar with 1 teaspoons cinnamon. When cake comes out of oven and still warm, sprinkle sugar and cinnamon mix on top. Serve warm.
