Mom's Easy Pea Salad

It's easy and attractive to present. You can add sliced boiled eggs and finely chopped red onion, if desired.

1 (8 ounce) package deluxe American cheese, diced
3 (15 ounce) cans baby peas, drained
1 cup creamy salad dressing (such as Miracle Whip?)
1 (4 ounce) jar diced pimentos, drained
1/2 teaspoon salt
1/8 teaspoon ground black pepper
Directions

Place the diced cheese into a salad bowl. Gently stir in the peas, salad dressing, pimentos, salt, and pepper until the diced cheese separates into small squares and the salad is thoroughly mixed. Cover and refrigerate 3 hours or overnight to chill and blend the flavors.



Creamed Peas with Bacon

4 slices bacon
1 (15 ounce) can peas
2 tablespoons all-purpose flour
salt and pepper to taste
1/2 (12 ounce) can evaporated milk

Place the bacon in a large, deep skillet. Cook over medium-high heat until evenly browned, about 10 minutes. Remove from pan, crumble bacon, and reserve.
Stir peas into bacon grease left in skillet. Cook on low heat until peas are warm. Stir together flour, salt, and pepper in a small bowl. Pour in evaporated milk and whisk until smooth. Stir milk mixture into peas; cook over medium heat until heated through and thickened. Stir in bacon.



Drain almost all the water, put the peas in a pan and heat well. When it is piping hot, add salt and pepper, with a nob of butter or margerine and blitz in the blender. Serve the puree with meats or as a side dish.

Roughly chop lettuce, a few mint leaves and heat in a bit of canned peas liquid. when wilted,add the peas, salt and pepper till the peas are heated through, and serve

Olive oil can be used for instead of margerine or butter for the puree

Add to cooked rice and salads

Just plain with melted butter, salt, pepper and a dash of onion powder; or add baby pearl onions to the peas while heating. Peas in a butter/cream sauce. Peas with a dab of mint jelly!



2 cans of peas and pickles and **** and then mix it up!!! its the best food in the world and take the **** when its fresh!
