I enjoy Chinese cuisine a lot regardless where I am, especially in China, Taiwan, Hong Kong, Malaysia and Singapore. They have different varieties (stewed, stir-fried, deep fried, steamed, boiled, fusion and hotpot), using lots of different ingredients (from herbs, spices, fungus, meat, vegetables) and taste differ a lot when you are at different provinces and countries.
I do like eating Chinese cuisine in western countries too because can't stop the cravings but I think they should improved by adding lesser salt, MSG and oil. I also hope they do not modify their cuisine too much when out of their country to suit the taste of the locals in the new land.

I have always felt chinese cuisine is meant to be consumed fresh, immediately and not stored.
Unlike some middle eastern, indian dishes I have found chinese cuisine does not improve over days. This is more than likely from the fresh ingredients used and style of cooking.

Have always thought western take away chinese shops that sell out of a baine marie are to be avoided!

I'm Chinese and I love the diversity of chinese food. All areas in china have different cuisine and western cultures only sample a tiny portion of what we have to offer. There is so much selection in Chinese food and we take it very seriously so food is just amazing there as well as usually being very well balanced and healthy. Love it to bits.

The real stuff is surprisingly easy on the system.
I've been living in China for some time now, eating Chinese most of the time, and I'm finding myself feeling much healthier and more energetic. I've lost a lot of weight, too, although I eat crazy amounts of food. I'm not sure how kosher it all is, but so far, my body likes it.
