When things grow in direct contact with dirt, certain things are absorbed into the food, making it taste "earthy"

Mushrooms, root vegetables (potatoes, carrots, turnips, anything under ground), certain herbs that are commonly used with these ingredients (rosemary and thyme)
Hope this answers your question!

earthy taste can mean anything, but I take it to mean it taste like dirt.

For example, fresh beets when cooked still have that taste that's like dirt... but other people describe it as an earthy taste.

That's probably why I prefer canned beets to fresh.

Sweet, Sour, Salty, Bitter, and Umame (earthy) are the 5 tastes. The fifth, Umame originated in Japan at the turn of the century.

Some foods with Umame are mushrooms, boullion, MSG, soy sauce

I would describe pickled beets as tasting 'earthy'....or raw potatoes......like they kind of taste 'dirty' or something like that.... that's what I think at least. But I LOVE pickled beets!!!

earthy taste would be something with woody herbs like thyme, rosemary, sage etc...
