When people make sushi for lunch, do they make various types? If so, what do they do with leftovers?!

Question: When people make sushi for lunch, do they make various types? If so, what do they do with leftovers?
Eat them the next day? I've noticed that the Japanese seem to have various types of fillings. Do they shorten the nori or something?

Answers:

Sushi is meant to be made fresh and then eaten straight away. At home, when I make sushi we try and make the correct amount we think we will eat, but it doesn't always work out that way. If we have leftovers it is best not to put them in the fridge as this causes the rice to harden and the nori to go soft. It is usually OK to leave out for 24 hours if it is not too hot and also depends on the filling.

Sushi is made to order. Leftovers aren't advisable.

The chefs, waiters, kitchen help eat the leftovers! waste not, want not!!!

I save the leftovers and eat them later.

Throw them at hobbos.

my Friday nights.
