What would a Chinese breakfast menu consist of?!

Usually Chinese restaurants do not serve breakfast so will not open that early unless its inside a hotel. You can order almost all the same thing as lunch and dinner.
They do have some small Chinese 'fast food' stalls or street stalls open early but maybe around 7am to sell breakfast like Mantou (Chinese steamed bun/bread) / Dou Jiang (soybean 'milk') / You Tiao (fried bread stick) / Shaobing (baked, layered flatbread), Shengjian mantou (small, pan-fried baozi) and Baozi (steamed, filled bun) which easy for take-out.
Otherwise you could also find some small eateries that sell soup noodle / rice porridge / dumplings / Douhua (made with very soft tofu "tofu pudding").
There will be also some confectioneries which are open early selling breads and cakes.
China is a very big country and different regions have their own type of cuisine including breakfast. The link Ryence provided is photos of traditional Cantonese dim sum from south China which is a wide variety of little snacks that can be eaten as lunch too. Nowadays many Cantonese people would have some of the following coffee/black tea, baked buns, instant noodle, ham and egg, more traditional breakfast is the porridge, fried dough, stir fried noodle.
In Shanghai or mid China, people tend to have something like soy milk with fried dough, sweet rice wrap, porridge with Chinese pickle, steamed pork buns. People in the north would have noodle soup, all sorts of steamed and fried buns, Chinese pickle.
Chinese rest do not open till 9am, they serve dim sum, char siew pow, chicken or meat porridge in small plates, or plain porridge with century egg, peanuts, fried ikan bilis. a lady push a cart around with all kinds of goodies and you select the items you want. Or you could go to the road side stores, tell sell mee soup, chee cheong fun, fried fritters to be dipped into the hot porridge and rice as well. There is also snake soup, turtle soup, frog poridge, and dog meat especially in China.

Same thing as you would lunch or dinner. They don't do waffles.
