Corn Noodle Casserole
1 (12 ounce) package uncooked egg noodles
1 pound ground turkey
1 (15 ounce) can canned or frozen corn
2 (11 ounce) can cream of mushroom soup
salt and pepper to taste
1. Preheat oven to 350 degrees F. Lightly grease a medium casserole dish.
2. Bring a large pot of lightly salted water to a boil. Add noodles, cook for 6 to 8 minutes, until al dente, and drain.
3. Place turkey in a skillet over medium heat, and cook until evenly brown. Drain grease.
4. In a bowl, gently mix cooked noodles and turkey, corn, and soup. Season with salt and pepper. Transfer to the prepared baking dish.
5. Bake 30 minutes in the preheated oven, until bubbly.
If you don't have ground turkey, use chopped cooked chicken. I do not recommend substituting ground beef; the flavor won't work as well.
Rice and Beans (serves one)
2 tablespoons vegetable oil
1 med. onion chopped
1 clove garlic, crushed
1/2 green pepper, chopped
1 tomato, chopped
salt and pepper to taste
1 cup cooked black beans
1 teaspoon cumin (or chili powder)
1 cup cooked white rice
In hot oil, in skillet, over med. heat, cook onion, garlic, and green pepper for 5 min. stirring occasionally. add tomato, salt and pepper. Cook until hot and bubbling. Stir in black beans, and cumin. Reduce heat to low, cover, and simmer for about 5 min. Serve over rice.
You could substitute pinto or kidney beans for the black beans. If you want really simple, take a can of beans, almost any beans will do and mix with some salsa, heat in the microwave and serve over instant rice.
Ham and Scalloped Potatoes
1 pound cubed, cooked ham
8 to 10 medium potatoes, peeled and sliced
2 onions, peeled and chopped
8 ounces processed cheese (Velveeta or similar), sliced
1 10 ounce can cream of mushroom soup
Put half of the ham, potatoes, an onions in the crock, place the cheese slices in, put the rest of the ham, potatoes and onions in. Spread soup over all. Cover and cook on low 8-10 hours, high 4 hours.
Slow Cooker Potato Soup
6 potatoes, peeled and cubed
2 onions
2 carrots, pared and sliced
2 ribs of celery, sliced
1 tablespoon parsley flakes
5 cups water
1 tablespoon salt
Pepper to taste
1/3 cup butter or margarine
1 12 oz. can evaporated milk
Put all ingredients except evaporated milk in slow cooker. Cover and cook on low 10 to 12 hours (high 3 to 4 hours). Stir in evaporated milk during last hour.
Crock Pot Stroganoff
1 pound lean stew meat
2 cans Golden Mushroom soup
1 can French Onion soup
1 package noodles, prepared according to package directions
put stew meat and soups in crock pot and stir. Cover and cook on high one hour, then change to low and continue cooking for approximately 4 hours.
Serve over prepared noodles with crusty french bread.
