Shanghai chicken is a chicken dish that got absolutely nothing to do with Shanghai. A lot of people in Shanghai will not like this dish because many people in Shanghai can not handle large amounts of garlic. The dish was invented by Westerners using Chinese cooking styles. I guess the word "Shanghai" was used to make the dish sound more Chinese. Ingredients used in Shanghai chicken contained stereotypical Chinese ingredients such as ginger, garlic, sesame oil, scallions/green onions, soy sauce, sugar and vinegar.

PS: In a way, Shanghai chicken is similar to India's Manchow soup, a dish invented by Indians using Chinese and Indian cooking styles. Other than the word "Manchow", Manchow soup got absolutely nothing to do with Manchow. Both Shanghai chicken and Manchow soup are not recognized by Chinese. :)



Over a century ago, ruthless chickens would get other chickens drunk. When these poor fowl woke up they would find themselves on a ship where they faced the choice of working or being thrown overboard.
