What's an alternative for seasoning spinach?!


Question: What's an alternative for seasoning spinach?
My grandaddy is making greens and to flavor them, he puts bacon in the pot while they cook. I'm a vegetarian and I love greens, but I don't want to eat them if he's using bacon. =/ I know there has to be another way to make them taste at least half as good. Think soul food!

Answers:

Garlic with a little butter (if you eat butter) is a good seasoning for spinach.



I use garlic in my spinach. . .

and a Goya product called Ham Flavor concentrate . . .its artificial ham seasoning...tastes just like the real thing but has no pork in it.

They sell it in the grocery store by the bullion. You might also want to check out vegetable bullion to give dishes extra flavor w/o using animal products.



I sometimes wilt spinach with butter, (a little bit of garlic) and a very little dash of SOY SAUCE. Of course with salt because I use soy sauce only to perfume spinach. When it is reduced, soy gives out a wonderful flavor. I use this to garnish swordfish poele with smoked paprika.

Gently sautee some onion (I use 1/2 big onion per kg of spinach) in butter, add spinach when onion is glassy, season with pepper and nutmeg when cooked. Add salt to taste.



Greens always taste better with a bit of freshly grated nutmeg



I use butter and sea-salt. Good luck.
