Revolving sushi question?!
My friend and I are considering going to a revolving sushi joint (ie conveyor belt style) later tonight. The operating hours of the restaurant are 12pm-10pm.
We'd get there around 7-8pm. Will all the sushi be reasonably fresh, or will there be some not-so-fresh items that have been floating around since noon? Pardon my ignorance, I've never been to the conveyor belt style sushi bar.

Usually the restaurant will make sure their ingredients and foods are fresh on conveyor belt. They are always constantly making new sushi out unless there is no customer.
It will not be a problem for busy and popular conveyor belt sushi restaurants but there are always a chance to get something not so fresh. Not to worry, you can always tell the staff who will be most willing to change it for you.
If you can't find the sushi you want on the belt, always make special order with the staff (price will be the same as on the belt).
