Yes, Okonomiyaki is "Japanese pizza" and its nice if you like the sauce which is similar to Worcestershire sauce but has its own stronger and thicker taste.
Try their curry which is closer to Indian curry but usually not spicy unless you requested for the most spicy. Goes with Udon or Don.
Cold Soba noodles with dipping sauce which is simple, not fuss and not oily.
Japanese pizzas, yummy with different kind of varieties. Chicken / beef teriyaki, Seaweed and Shiso, Cubed Steak and Garlic & etc.
Wagashi, a traditional Japanese confectionery which is often served with tea, especially the types made of mochi, azuki bean paste and fruits.
Try out many others Japanese confectioneries like Kamejyu, Yatsuhashi, Seioubo, Komatsuya and etc which are usually nice to look at and delicious to eat.
Exotic flavors of ice-cream - wasabi, squid ink, sea salt, seaweed, eel, lamb raisin and etc.
Japanese Kit Kat - honeydew, green tea, fruit parfait, kiwifruit, soy bean, caramel, watermelon and etc depending on the edition available.
Nattō a traditional Japanese food made from soybeans fermented with Bacillus subtilis which can eat with rice.
Fugu (puffer fish), a delicacy in Japan and not all restaurants are licenced to sell it so you will have to find out where is the best place to eat.
Omurice (Omlette rice), you can find different flavors not just the normal one and only type found in most Japanese restaurants outside Japan.
Can't recall all but Japan is really full of new ideas so never tired of visiting her again and again.

1/2 small onion, finely chopped
3/4 cup flaked salmon
2 cup leftover steamed rice
2 tsp sesame oil
2 Tbsp chopped green onion
1 Tbsp soy sauce
Heat sesame oil in a large skillet or wok. Stir-fry onion on medium heat until it's almost clear. Add flaked salmon and stir-fry together. Season with salt and pepper lightly. Add rice and stir-fry for a few minutes. Sprinkle green onion. Pour soy sauce over the fried rice and stir quickly. Stop the heat.
