I blanched some Italian green beans....?!


Question: I blanched some Italian green beans....?
...I later cooked them and a clear skin came off from them. I had to throw them out.
Does anyone have an idea of what went wrong?

I think you may have blanched them for too long, or you didn't put them in ice water?

Blanching in Boiling Water

To begin blanching you’ll need a large kettle with a lid, and a wire basket that fits inside. The kettle should be large enough to hold a gallon of water and a pound of fresh vegetables.

Begin by heating a gallon of water to boiling, and while the water is heating, prepare the green beans by cleaning, snapping, and removing blemishes and strings if necessary. After the water comes to a full rolling boil, place the green beans in the wire basket, and lower them into the boiling water. Cover the kettle, and allow the green beans to remain in the boiling water for three minutes. Immediately immerse the green beans in ice water to stop the cooking process, and leave them in the cold water for about six minutes before draining.

One example is this simple green bean side, which Omniman taught me to make years ago. Simply blanch about 1 pound of green beans until tender-crisp. Drain well and toss with extra-virgin olive oil [the fruitier, the better], balsamic vinegar, loads of minced garlic, salt and pepper, and a tiny sprinkling of red pepper if you're so inclined. Buon appetito!
Our local green beans are so good right now. I can eat most any veggie with just garlic, salt and pepper, but a little evoo and balsamic added sounds super!
Yum.. Very similar to the way my Italian nan makes.. You are so right about simplicity in Italian cooking. What I love about cooking Italian food is that you do not need a ton of ingredients to make something work, just the right ones.. I have seen some of your posts where you travel. I recently was able to be a part of the veggie pride parade.
This is my favorite meal. I know it sounds crazy but over the past few months, I've been eating a pound of green beans at least every other day - just like this. I crave it non-stop and it's so filling but low calorie.

When blanching, bring salted water to the boil, add the cleaned veg and remove as soon as the water comes back to the boil. Drain and chill under running cold water. Drain well then bag and freeze. I have never had any problems.
