Question: What makes sourdough bread, sour?
Answers:

Real sour dough is made with living yeast and living lactic acid bacteria --- that are those bacteria that also make Sauerkraut and sour cream sour. The bacteria produce CO2 gas, that are the bubbles in the bread.



It's called a starter. Easy to make, look it up.



I believe it's in the starter.....
