Your daughter's thinking day task sure sounds like a fun challenge, and a great way to expose oneself to different cultures and foods.
From my own experience, I find that savory Indian dishes are hard to adapt to younger children palettes. In my youth, didn't enjoy the taste of the Indian spices as much simply because it was a huge kicker on my undeveloped palette. I found that I enjoyed just snacking on naan bread because everything else was too robust for me.
May I suggest a sweet recipe instead? A popular Indian dessert that is very easy to make and is enjoyable is Carrot Halwa. It is a simple carrot pudding using grated carrots, milk, milk powder, cardomon powder (I would suggest using the green cardomon variety. Add to one's perfer taste b/c it can be strong/unfamiliar), and ghee (or unsalted butter). To garnish, you may replace pistashio/cashew nuts with golden raisins (it also gives the carrot halwa/pudding a nice texture).

Hey sis. Here is the link to one I like. You can even change the number of servings and it converts it for you. I added a little extra Curry, a tad Cumin, and just a tiny bit of turmeric. You could try it with the small serving size first to see if it's good. It's not too spicy so it works for kids. It's also good served over couscous instead of rice.

wow! sounds like quite and endeavor. Have a look at the websites below. Think about the Indian style mac and cheese, or doing a dal since lentils are cheap and tasty. You can do an Indian drink. What ever you decide, best of luck to you! I know it will be delicious.

This is the quickest and economical recipe. South Indian style mashed potatoes -
Potatoes - cooked and mashed say 10 large ones
Buttermilk about 1/2 a gallon(you can thin it out using 1/4 gallon of water), salt, cilantro a bunch, jalapenos slit(too hot for non Indians) or regular black pepper.
Grated ginger about 3 tablespoons
Cumin powder 2 tablespoons(optional)
Take the mashed potatoes in a bowl, add enough buttermilk to make it of your regular finished mashed potato consistency. Add chopped cilantro, cumin powder, salt and pepper. Stir well, serve chilled or at room temperature.
Another easy recipe is lemon rice, south Indian style-
Rice uncooked about 4 cups(use long grained, does not have to be fancy basmati since it is South Indian dish where Basmati is not popularly used. You can still use Basmati if you like)
1/ cup peanuts, salt, 6 tablespoons oil, salt, pepper(jalapenos 3 slit or regular black), cilantro a bunch minced, lemons or limes about 4, minced ginger(optional) 1 inch block, turmeric(1 teaspoon)
Cook the rice with water. Keep aside to cool. Add about 2 tablespoons of oil to the rice.Now add salt, pepper, minced cilantro. The idea is to keep the grains separated, not a mush.
Heat the remaining oil in a saucepan, add the peanuts, when roasted well in about 2 minutes, add the optional turmeric and ginger and stir for 10 seconds. Pour the whole thing on top of the cooled rice and mix well, but gently so that you don't break the rice.
You can serve this dish hot or cold.
