Attention all Italian food lovers, any pairing suggestions?!

Question: Attention all Italian food lovers, any pairing suggestions?
I'm hosting a dinner this Sunday for some friends & I'm curious your suggestions for a complimentary paring of olives, cheese, & crackers to go with my main course, which consists of: Italian sausage, pasta, fresh spinach, roasted red peppers, onions, & garlic and fresh mushrooms). I'm only serving about 6-7 people,

PS: the red wine and Pelligrino is already covered unless you can think of something awesome to add! Hit me up if you have ideas!

I agree, no crackers but use crustini instead. Some nice smoked provolone or asiago just melted on the crustini with the peppers. Other alternative is a salad with all the ingredients and cut up crustini as croutons.

traxent,
You are a most lucky individual to love Italian foods & to live in the SF area where there is some of the best choices. I dont think you will get adequate answers on YA. Go to a local Italian deli - they know & have it all! If you don't know one, use YELP to find one near you. At least that is what I would do. When I lived in SF, I would take the bus to North Beach & stop by this great little deli - Molinari's - on Kearney. It had it all. And skip crackers - go with your local fresh baked breads.

I still drop in when I visit the city.

First: no crackers please - not italian at all
The peppers etc. should be served roasted and in a good olive oil as an appetizer or with the drinks before the main course
Pasta is normally a first course and meat/fish with some veggies to follow. Cheese and fruits after and then dessert.

Use bread stick or good quality crunchy bread (Italian or French). Sounds like your main course will be plenty heavy... You may want to simply serve a big mixed green salad... or even a Greek salad. I know it isn't Italian but it for sure is Mediterranean!

Add bacon and salami and onion salad with custard tart.

Seriously where do you live?
