chickpeas, for the balls inside.



depends on which version you're talking about:

Egyptian falafel is made out (almost entirely) of fava beans' paste
Syrian/Lebanese is mostly chickpeas (their lighter in color)
Jordanian/Palestinian/Israeli falafel is a mix of both (fava beans and chickpeas)

all three variations mentioned above contain herbs and spices (different combinations of parsley, cilantro, cumin, etc...)
