Question: Do good bacteria in kimchi get killed by high heat?
i understand that eating raw kimchi is healthy but what about cooked kimchi such as kimchi stew, kimchi fried rice etc? is there any good bacteria left after high heat cooking?

Answers:

Cooking and pasteurization will kill off the probiotics.
So add kimchi to hot foods rather than cooking it directly, since high heat will kill the probiotic bacteria.



Bacteria are killed by the acid and alcohol created by the fermentation of the cabbage. Heat is not necessary.
I'm not sure if there are any good bacteria left in the cabbage after fermentation, though I would guess probably not.
