What is the gelatinous goop in my Sesame Chicken?!

Question: What is the gelatinous goop in my Sesame Chicken?
When I order takeout Sesame Chicken from my favorite Chinese place I have once complaint. Sometimes there’s just way to much sauce on my sesame chicken. It is a gelatinous semi-transparent orange sauce. What the heck is it - what is the typical sauce used and what is it made out of?

I believe a chinese chef uses starch to thicken the sauce that he/she makes. My guess is that they simply used too much starch.

ORANGE sauce like what's on orange chicken probably. It's got sugar, garlic, ginger, and sometimes even chile paste so it's not all liquid. If you heat it up it'll melt though, the colder it gets the harder it gets.
